Stuffed Zucchini


When in season, Zucchini is such a tasty vegetable that it is hard to resist. This recipe combines the Zucchini with ham, mushrooms and pasta sauce into a main course that is healthy and very tasty.
Serves 1

Ingredients:
1 medium Zucchini (6-8 oz)
1/4 cup fresh mushrooms, coarsely chopped (about 3 medium mushrooms)
2 tablespoons onion, finely chopped
2 tablespoons ham, finely chopped
1/2 teaspoon worcestershire sauce
2 tablespoons Panko bread crumbs
2 tablespoons grated parmesan cheese
3 tablespoons pasta sauce
1/4 teaspoon pepper

Directions:
1. Preheat oven to 375 degrees F.
2. Trim the ends off of the zucchini and slice lengthwise.
3. Scoop out the seeds and pulp of the zucchini using a spoon or melon baller. Chop up the pulp and put in a medium bowl.
4. Add the rest of the ingredients to the bowl and stir until everything is moistened by the pasta sauce.
5. Stuff the zucchini with this mixture and place on a baking sheet.
6. Bake for 45 minutes.

Notes:
1. Look for zucchini that is short (<9") and fat.
