Baked Salmon Cakes


Pair with a baked potato, brown rice, or a vegetable and you have a healthy, delicious meal.
Serves 1

Ingredients:
1 can skinless and boneless Pink Salmon (6 oz)
1/4 cup onion, finely chopped
2 teaspoons dill
2 garlic cloves, minced
1 egg, beaten
1/4 teaspoon lemon juice
1/4 cup whole-wheat bread crumbs

Directions:
1. Preheat oven to 350 degrees F.
2. Separate salmon with a fork in a medium bowl.
3. Add remaining ingredients, mix well and shape into two patties.
4. Place patties in a non-stick baking dish or baking sheet.
5. Bake about 15 minutes until lightly browned, turning over after 8 minutes.

Notes:
1. The Spicy Seafood Sauce recipe makes an ideal topping for these Salmon Cakes.
