Dijon Pork Chops


Pork chops make the ideal main course for any meal. Add a small salad and some fruit and you have a nutritious and enjoyable meal.
Serves 1

Ingredients:
2 small pork chops (1/2 pound total)
1 tablespoon extra-virgin olive oil
4 Ritz crackers, crushed in a sandwich bag
1 tablespoon Dijon mustard
Salt and pepper to taste

Directions:
1. Heat oven to 425 degrees F.
2. Trim fat from the pork chops. Lightly salt and pepper the pork chops.
3. Heat the oil in a skillet over moderately high heat, add the pork chops and brown, turning once after 4 minutes.
4. Transfer the pork chops to a baking pan and spread tops with the Dijon mustard. Add the crushed Ritz crackers on top of the mustard.
5. Bake in middle of oven until meat is just cooked through, about 7 to 10 minutes.

Notes:
1. If you do not have Ritz crackers, bread crumbs can be substituted. Panko type bread crumbs are especially good.
