Alaska Salmon Potato Cakes
A simple to make wild Salmon recipe that is ideal for two people. Canned salmon is always caught wild and has a much better taste than farm raised.
Serves 2
Ingredients:
1 can (6 oz) Alaska Pink Salmon, boneless, skinless
1 cup mashed potatoes
1 egg, beaten
1/4 cup finely chopped red onion
1/4 cup bread crumbs
1/8 teaspoon cayenne pepper
1/2 teaspoon dry mustard
2 tablespoons canola oil
Extra bread crumbs for coating
Salt and pepper to taste
Sauce:
3 tablespoons ketchup
1 tablespoon prepared horseradish
Directions:
1. Drain salmon and break into small chunks in a medium size bowl.

Mix in the potatoes, cayenne pepper, dry mustard, egg, onion and the bread crumbs. Mix well.
3.
Divide into 4 patties that are about 3" in diameter and 1/2" thick.

Coat the patties in the extra bread crumbs.
5.
Heat oil in a 10" saute pan on medium-high heat.
6.
Saute for 3-4 minutes on each side until both sides are well browned.
7.
In a small bowl, mix the ketchup and horseradish.
8.
Top the patties with this sauce and serve.
Notes:
1. A small amount of bones and skin are completely edible and a source of calcium and Omega-3 fatty acid.
2.
Dill sauce also makes an ideal topping.
3.
Another way to serve these patties is to melt sharp cheddar cheese on top during the last few minutes of frying and serve them on hamburger buns with thousand island dressing.
