Chicken and Black Bean Bake
A spicy "South of the border" casserole that the whole family will enjoy.
Serves 4
Ingredients:
1/2 lb hot italian sausage
1/2 cup baking mix (Bisquick)
1-1/2 cups shredded cheddar cheese
1-1/2 cups diced cooked chicken or turkey
3/4 cup chunky salsa
1 (15 oz) can black beans, drained, rinsed
2 eggs, lightly beaten
1 (4 oz) can diced green chiles
Sour cream
Directions:
1. Preheat oven to 350 degrees F.

Cook sausage in a medium skillet over medium-high heat until thoroughly cooked, frequently stirring. Drain.

In a large bowl, combine flour, sausage and 1 cup of the cheese. Mix well.

Spread this mixture into an greased 8" x 8" glass baking dish. Sprinkle with the chicken. Top with the salsa and beans.

In a medium bowl, combine the eggs and chiles and mix well. Pour over mixture in the baking dish. Sprinkle with the remaining cheese.
6.
Bake for 25 to 35 minutes or until set and edges are golden brown. Cool 5 minutes before serving.
Notes:
1. Do not drain the diced Green Chiles.
2.
Serve with sour cream and extra salsa on top.
