Raspberry Vinaigrette


A light fruity dressing that is good anytime of year. A nice change from heavy cream-based dressings.
Serves 8

Ingredients:
1/2 cup raspberry vinegar
1/3 cup sugar
3/4 cup olive oil
1/2 teaspoon Dijon mustard
1/8 teaspoon pepper

Directions:
1. Warm the vinegar in a small microwave safe bowl (about 30 seconds).
2. Add the sugar and mix until the sugar is dissolved. Cool to room temperature.
3. Pour into a jar with a tight fitting lid. Add remaining ingredients, cover and shake well.
4. Refrigerate until chilled. Shake before using.

Notes:
1. Refrigerate any leftovers.
