Ham Salad Sandwiches


With a favorite side dish this recipe can be dinner, with enough left over for lunch the next day.
Serves 1

Ingredients:
1/3 cup red onion
1/2 cup extra lean ham
2 tablespoons dill relish
1/2 tablespoon Grey Poupon mustard
1-1/2 tablespoons mayonaise
2 slices whole wheat bread

Directions:
1. In a small food processor, chop the onion to a fine consistency and put in a small bowl.
2. Chop the ham to a fine consistency in the food processor and add to the bowl.
3. Add the relish, mustard and mayonaise to the bowl and mix well.
4. Chill for 30 minutes, then make your sandwiches.

Notes:
1. This recipe makes enough ham salad for 1-2 sandwiches.
2. Although this recipe is best with a soft wheat bread, you can also use pita bread or rolls.
3. Go wild with the trimmings, lettuce, tomato and cheese are excellent.
