Shredded Potato Quiche
Quiche with a crunchy potato crust that makes a delicious one dish meal. Serve with a fresh green salad for a dinner the family will enjoy.
Serves 4
Ingredients:
1 (16 oz) package frozen shredded potatoes, thawed
5 eggs, lightly beaten
1 1/2 cups shredded Swiss cheese
1 cup cooked ham, cut into thin slices (1/8" x 1/2" x 1/2")
1/4 cup milk
Salt and pepper to taste
Directions:
1. Preheat oven to 375 degrees F. Lightly grease a 9 inch pie pan.

Press potatoes into the pie pan to make a crust. Spray the potatoes lightly with a cooking spray or coat with olive oil.

Bake the crust in the preheated oven until lightly browned, about 10 to 15 minutes.

In a bowl, mix the eggs, milk, ham, salt and pepper until well mixed. Pour this mixture into the baked crust.

Bake about 20 minutes or until the top is lighly browned. A knife or toothpick
inserted into the center should come out clean.
Notes:
1. Cooked bacon can be substituted for the ham.
2.
A light coating of Parmesan cheese on the top of the quiche before baking adds an exceptional extra taste.
