Vegetarian Cheeseburgers
Tasty burgers for the vegetarian that can be flavored in dozens of ways. Based on chickpeas which are flavorful on their own.
Serves 4
Ingredients:
1 (15 oz) can chickpeas, rinsed and drained
1 (4 oz) can diced green chiles, drained
1/3 cup fresh parsley
2/3 cup bread crumbs
1 large egg, lightly beaten
2 tablespoons canola oil
1/2 teaspoon cajun seasoning
4 slices cheddar cheese
4 hamburger buns
Directions:
1. In a food processor, pulse the chickpeas, green chiles and parsley until finely chopped.

Place this mixture in a medium bowl. Add the bread crumbs, cagun seasoning and egg.

Mix well and form into 4 patties about 3/4" thick.

In a large skillet, heat the oil over a medium high heat.

Cook the burgers for 4 minutes, then flip and cook for 4 more minutes. Top with the cheese slices during the last minute of cooking.
6.
Serve the cheesburgers on the hamburger buns with your choice of condiments.
Notes:
1. Chickpeas are also known as garbanzo beans.
2.
If the burger mixture is too moist to form patties that hold together, add more bread crumbs.
3.
Diced jalapeno peppers can be used if you desire a hotter, spicier taste.
