Stir Fry Chicken with Asparagus and Peanuts


When you are in the mood for a chinese stir fry that the family will enjoy, this is the one. Serve over noodles or rice with a simple salad as a side dish.
Serves 4

Ingredients:
1 tablespoon sesame seed oil
1 lb fresh asparagus, tough ends removed, cut into 1" pieces
1 lb chicken breast, cut into bite-size pieces
4 green onions, trimmed and cut into 1" pieces
1 teaspoon ground ginger
1 tablespoon oyster flavored sauce
1 teaspoon hot chili oil
1/4 cup salted peanuts

Directions:
1. Heat oil in a wok or large frying pan over high heat.
2. Add asparagus and cook for 2 minutes stirring constantly.
3. Add chicken and cook for 4 minutes more, stirring constantly.
4. Lower heat to medium,
5. In a small bowl mix the ginger, oyster sauce and chili oil.
6. add this mixture and the green onions to the pan and continue cooking for two minutes or until the chicken is cooked through.
7. Stir in peanuts and serve immediately.

Notes:
1. Best served over hot cooked rice or egg noodles.
