Sherry Tomatoes


An easy to prepare side dish that compliments any meal. Use instead of salad for a change of pace.
Serves 1

Ingredients:
1 teaspoon olive oil
1 large garlic clove, finely chopped
1/4 cup onion, finely chopped
3/4 cup cherry tomatoes
1 tablespoon dry sherry wine
1 teaspoon sugar
1/4 teaspoon crushed red pepper

Directions:
1. Preheat oven to 375 degrees F.
2. Heat a small fry pan on medium high. Add the olive oil, garlic and onions.
3. Saute for 2-3 minutes then add cherry tomatoes.
4. Mix the sherry, sugar and red pepper flakes in a small bowl.
5. Add this mixture to the fry pan and saute for an additional 2-3 minutes.
6. Place this mixture in a small baking dish and bake for 18-20 minutes.

Notes:
1. Using red onion adds a tangy taste to this recipe.
2. If you do not have sherry wine, use red wine vinegar.
