Cucumber Salad
A delicious healthy side dish. The bursting juiciness of crisp cucumbers are what makes them so special.
Serves 1
Ingredients:
1/2 cucumber
1 small red onion
2 tablespoons wine vinegar
1 teaspoon sugar
1 teaspoon dried dill
Directions:
1. Slice the cucumber lengthwise and then slice into thin 1/2 round pieces.

Slice the red onion into thin slices.
3.
In a medium bowl combine the vinegar and sugar and stir well.

Add the cucumber and onion and toss to coat. Stir in the dill.
5.
Place in an airtight container and refrigerate for at least 1/2 hour, shaking the mixture every 10 minutes.
Notes:
1. The cucumber does not need to be peeled, although it does add a different texture if peeled.
2.
It is sometimes difficult to find small red onions. In this case, use 1/4 of a medium onion.
3.
Adding a few tablespoons of water to the mixture will reduce the vinegar taste. This can be adjusted for personal preference.

Store the other half of the cucumber by wrapping plastic wrap around the end sealed with a rubber band. It will keep for 2-3 days.
