Orange Poppy Seed Bread


Home baked breads are one of life's simplest yet greatest pleasures. The smell itself is very refreshing.
Serves 2

Ingredients:
1 cup whole wheat flour
1/4 cup sugar
1/2 teaspoon baking soda
1 teaspoon poppy seeds
1/2 cup orange juice
1/2 teaspoon vanilla extract

Directions:
1. Preheat oven to 325 degrees F.
2. In a medium bowl, combine the flour, sugar, baking soda and poppy seeds. Mix well using a whisk.
3. Add the orange juice and vanilla and stir with a spoon until the dry ingredients are moistened.
4. Coat a mini-loaf pan (3" x 6" x 2") with nonstick cooking spray. Spread the mixture evenly in the pan.
5. Bake for 45 minutes, or until a wooden toothpick inserted in the center comes out clean.
6. Remove bread from oven and let sit for 10 minutes. Invert loaf onto a wire rack, turn right side up, and cool before slicing.

Notes:
1. Other ingredients may be substituted for the poppy seeds. Raisins, chopped nuts, blueberries or anything that is in season.
2. Experiment! You will be amazed at the results.
3. Any baking container that holds about 16 oz can be used instead of the mini-loaf pan.
