Apricot Chicken Stir Fry


Simple and fast to make, this recipe will satisfy your taste buds. Served with orange segments it makes a complete meal.
Serves 1

Ingredients:
1 small garlic clove, minced
1/2 teaspoon canola oil
1/3 pound boneless skinless chicken breast, cut into thin strips
1/2 cup frozen stir fry vegetables (defrosted in the microwave and drained)
3 tablespoons apricot preserves
1/8 teaspoon sesame oil
1 tablespoon soy sauce
1/2 teaspoon Dijon mustard
1/8 teaspoon ground ginger
1 cup hot rice

Directions:
1. In a small bowl, mix the preserves, sesame oil, soy sauce, mustard and ginger.
2. Add the canola oil to a small frying pan (8-1/2 inches) and heat over medium high.
3. When the oil is hot, add the garlic and chicken and stir fry until cooked.
4. Add the vegetables and sauce, reduce heat to a simmer and cook uncovered for 5-7 minutes.
5. Serve over hot rice.

Notes:
1. The apricot preserves can be substituted with cherry or berry preserves.
2. To heat rice that is kept in the refrigerator, place in a small bowl, add 1 tablespoon water, cover with plastic wrap and microwave for 30 seconds.
