Sweet and Sour Ham

This delicacy is an appetizer from the Hawaiin islands normally called a "pupu" and served with drinks and meals. Once you try it you will be hooked.
Serves 6

Ingredients:
1 lb ham, cut into 1" cubes
3 garlic cloves, finely minced
3 tablespoons peanut oil

Sauce:
1 tablespoon water
3 tablespoons soy sauce
1 tablespoons rice vinegar
3 tablespoons brown sugar
3 tablespoons corn starch
1/2 teaspoon ground ginger
1/2 teaspoon salt

Directions:
1. Fry ham and garlic in 2 tablespoons peanut oil until brown (use a non-stick frying pan).
2. Remove ham from frying pan and drain ( a paper towel in a plate works best for this step).
3. Mix the soy sauce, vinegar, brown sugar, cornstarch, salt and ground ginger in a small bowl until the cornstarch is dissolved.
4. Add the cooked pork to this sauce and stir well.
5. Reheat the frying pan on medium heat and add 1 tablespoon peanut oil.
6. When the oil is hot, add this mixture to the frying pan. Stir vigorously until the sauce is gelatin like, then remove from pan.

Notes:
1. Pork chops can be substituted for the ham if desired.
2. This recipe can be eaten as is or used in fried rice or other recipes.
