Chicken Stroganoff
An easy to make dish that brightens your day when served over rice or egg noodles.
Serves 1
Ingredients:
1/2 boneless chicken breast, cut into strips
1 cup sliced mushrooms
1/3 cup chopped onion
1/3 cup chopped green pepper
2 tablespoons butter or margarine
2 tablespoons flour
1/2 cup chicken broth
2 tablespoons sour cream
1/8 teason salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg
Hot cooked rice or egg noodles
Directions:
1. In a skillet, saute the chicken, mushrooms, onion and green pepper in the butter until the chicken is no longer pink.

Combine the flour and broth and gradually add to the skillet. Simmer and cook for 2 minutes while constantly stirring until thickened.

Reduce heat and add the sour cream, salt, pepper and nutmeg. Stir until heated through.

Serve over rice or noodles.
Notes:
1. Whwn mixing the flour and broth, use 3 tablespoons of the broth and mix using a whisk until the flour is dissolved in the broth, then add the rest of the broth and mix well.
