Creamed Crab on Toast
This is an easy to make luncheon dish or Sunday supper. The Old Bay seasoning and lemon juice complement the flavor of the crab nicely.
Serves 1
Ingredients:
1-1/2 teaspoons cornstarch
1/3 cup milk
1 tablespoon butter
1/4 teaspoon cajun seasoning
1/4 teaspoon Old Bay seasoning
1/2 teaspoon lemon juice
1/3 cup crab, broken into small pieces
1 slice whole wheat toast
Salt and pepper to taste
Directions:
1. Combine the cornstarch, cajun seasoning, Old Bay seasoning, milk and lemon juice in a small saucepan and bring to a simmer on medium heat.

Add butter while stirring constantly using a whisk.

When sauce is thickened, add the crab and stir with a spoon.
4.
Pour sauce over toast and eat.
Notes:
1. Served on freshly made biscuits is also very delicious.
2.
Imitation crab (surimi) can also be used if fresh is not available.
