Chipped Beef on Toast
Served in the military since 1910, this delicious breakfast treat can be made and served in a dozen different ways as described in the notes section.
Serves 1
Ingredients:
1 oz dried beef (Hormel)
1 tablespoon cornstarch
1 cup milk
1 Tablespoon margarine
1 pinch of cayenne pepper
Salt and pepper to taste
2 pieces toast
Directions:
1. Slice the dried beef into strips that are 1/3" wide by 1" long.

Combine cornstarch and milk in a small saucspan and bring to a simmer on medium heat.

Add margarine and cayenne pepper stiring constantly for a minute using a whisk.
4.
When sauce is thickened, remove from heat.
5.
Add dried beef, stir until mixed well and serve on toast.
Notes:
1. Can also be served on english muffins, biscuits or rice.
2.
Instead of dried beef, you can use 2 chopped hard-boiled eggs, 1/4 lb cooked italian sausage, or a 6 oz can of solid white tuna.
