Arancini Loaf


Arancini are a specialty of Sicilian cuisine. They are deep fried rice balls filled with meat sauce and cheese and sold by street vendors in Sicily. This recipe is an adaptation.
Serves 1

Ingredients:
1 cup cooked rice
1/4 cup onions, finely chopped
1/2 cup mozzerella cheese, shredded
1/4 cup parmesan chees, grated
1/4 cup ham, finely chopped
1 egg, beaten
1/4 teaspoon pepper
1/8 teaspoon garlic powder

Directions:
1. Preheat oven to 450 degrees F.
2. In a medium sized bowl, mix all of the ingredients well.
3. Put this mixture in a mini-loaf pan (6" x 3" x 2") and bake for 15-20 minutes or until top is golden brown.
4. Cool for 5 minutes before serving.

Notes:
1. Shredded mozzerella cheese can also be added to the top of the loaf before baking.
2. Slices of the loaf can also be fried in a small amount of olive oil the next day as an ideal side dish for brunch.
3. Grease the loaf pan before adding the mixture to make removal easier.
