Spicy Meatloaf
A spiced up version of the classic meatloaf recipe. A perfect size for dinner with enough left over for a sandwich the next day.
Serves 1
Ingredients:
1/2 teaspoon prepared horseradish
1/2 teaspoon dry mustard
1/8 teaspoon pepper
1/2 teaspoon crushed red pepper
1 teaspoon worcestershire sauce
1 egg
1/4 cup onion, finely chopped
1/2 cup quick-cooking oats
1/2 lb ground beef
3 tablespoons ketchup
Directions:
1. Heat oven to 350 degrees F.

In a medium sized bowl, mix together the egg, onion, horseradish, mustard, pepper and worcestershire sauce.

Add the oats and ground beef and mix well using your hands.
4.
Place the mixture in a mini-loaf pan and top with the ketchup.
5.
Bake uncovered for 45 minutes.
Notes:
1. If you do not have a mini-loaf pan, you can use a muffin pan or just form the mixture into a small loaf and cook on a baking sheet.
