Oven Roasted Potatoes


An easy to make side dish that is delicious with any main course. Ranch dressing can be used as a dipping sauce.
Serves 1

Ingredients:
2 medium white potatoes, quartered lengthwise
Extra-virgin olive oil, to coat
Seasonings to taste
Salt and pepper

Directions:
1. Heat oven to 400 degrees F.
2. Drizzle potatoes with extra-virgin olive oil.
3. Sprinkle potatoes with the seasonings and place on a non-stick baking sheet.
4. Bake for 25-30 minutes or until tender.
5. Shake the baking sheet after 10 minutes to prevent sticking.

Notes:
1. After quartering the potatoes, wipe off the moisture with a paper towel. Lining the baking sheet with aluminum foil makes cleanup easier.
2. Any type of potato can be used, the white potatoes are nice because you can leave the skin on and they have a minimum amount of surface imperfections.
3. Any type of seasoning you desire can be used for the flavoring. Chili powder, cayenne pepper, garlic salt, rosemary and parmesan cheese are ideal choices.
4. An olive oil or canola oil cooking spray is also cinvenient for coating the potatoes.
