Potato Latkes


Shredded potatoes and chopped onions are bound with flour and egg, then fried in oil to make delicious potato panckaes that are crispy on the outside and tender on the inside.
Serves 2

Ingredients:
1 medium white potato (grated and squeezed dry)
1/4/cup finely chopped onion
1 egg, beaten
2 tablespoons all-purpose flour
3 tablespoons canola oil
Salt and pepper to taste

Directions:
1. In a medium bowl stir the potatoes, onion and egg together. Sprinkle the flour over this mixture and continue mixing until well mixed.
2. In a small non-stick frying pan (at least 8.5 inches diameter), add the oil and heat over medium-high heat.
3. When the oil is hot, add the potato mixture to the hot oil, pressing down to form two 1/2 inch thick patties.
4. Brown on one side, then turn and brown on the other side.

Notes:
1. Often served with applesauce as a topping.
2. Traditionally eaten during the Jewish Hanukkah festival.
