Red Potato Salad


Homemade potato salad is one of the best side dishes for any meal, especially during the summer.
Serves 2

Ingredients:
2 medium red potatoes, quartered
2 tablespoons mayonnaise
1 green onion, sliced
1 teaspoon Grey Poupon mustard
1 teaspoon honey
Salt and pepper to taste

Directions:
1. Place potatoes in a saucepan and add water to completely cover potatoes.
2. Reduce heat to a simmer and cook for 20 minutes or until potatoes are tender.
3. Rinse potatoes with cold water until cool then drain.
4. Mix remaining ingredients in a bowl, add potatoes and mix lightly.
5. Cover bowl and refrigerate until chilled

Notes:
1. For added zest, stir in 2 tablespoons of chopped fresh chives or parsley before chilling.
2. Sliced black olives are also nice if you have them.
3. 1 tablespoon of red wine vinegar also adds a tang that is delicious.
