Ham & Swiss Quiche


An easy to make Quiche that will satisfy the heartiest appetite. The trick to the ease of making this recipe is to make the crust as part of the recipe instead of making a separate crust.
Serves 1

Ingredients:
1/2 cup cubed ham
1/4 cup shredded Swiss cheese
1/4 cup chopped onion
1/4 cup baking mix (Bisquick)
1/3 cup milk
1/2 teaspoon cajun seasoning (McCormick)
Dash of pepper
1 tablespoon grated parmesan cheese
1 egg

Directions:
1. Heat oven to 400 degrees F.
2. Grease a small baking dish (16 oz capacity).
3. Sprinkle ham, Swiss cheese and onions in the baking dish.
4. In a separate bowl stir baking mix, milk, Cajun seasoning, pepper and egg until blended.
5. Pour into baking dish. Top with grated parmesan cheese.
6. Bake 25-30 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

Notes:
1. A Corning Ware 15 oz oval baking dish is perfect for this recipe. A mini-loaf pan (3" x 6" x3") also works well.
2. The cajun seasoning gets rid of the flour taste of the baking mix. 1/4 teaspoon cayenne pepper and 1/2 teaspoon cumin can also be substituted.
3. The ham can also be replaced with cooked bacon or any other meat of your preference. Mushrooms are also a good substitution for the meat. If using mushrooms, they should br sauteed in olive oil first.
4. If you are on a low sodium/low fat diet, "heart Smart" Bisquick should be used.
